Recipe of the month: Lemon Butter Fish
Fish is great for brain health, offering omega-3 fats and other important vitamins and nutrients. High in fiber, this dish is easy to cook and wonderful to enjoy, knowing that you are serving up healthy ingredients on your plate.
Ingredients
4 fillets of halibut, cod, or other white fish
3 tbsp. butter
Juice and zest from 1 medium lemon plus extra lemon slices for garnish
1 tsp. paprika
1 tsp. garlic powder
1 tsp. pepper
1 tsp. salt
3 tbsp. olive oil
Freshly chopped green onion, parsley, or basil for garnish
Cooking instructions
Melt the butter in a small pan on the stove and combine it with the lemon juice, lemon zest, and salt. Set this aside.
Combine the remaining seasonings in a different bowl. Pat the fish fillets dry with paper towels and dip each one into the spice bowl on both sides, covering the fish with the spice mixture.
Heat the olive oil in a large pan over medium heat, then place the fish fillets in the pan. Make sure the fillets are not touching so they cook evenly. Cook the fish on each side until the fish becomes opaque and is lightly browned. Drizzle some of the lemon butter sauce over the fish as you cook.
Serve the fish with the freshly chopped green onion, parsley, or basil for a garnish and eat while hot. Squeeze extra lemon on the fish for a cool, tangy flavor.
Tip: Serve this dish with brown rice and a salad to make a complete meal that is healthy and delicious!
