Recipe of the month: Lentil Tacos with Cream Sauce
This spicy, tangy recipe is a perfect meal for lunch and dinner. The cauliflower and lentils are packed with nutrients and the creamy sauce will make it a favorite dish for you and your family.
1 head of cauliflower, cut into small bites
3 tbls. olive oil
1 cup chopped onion
2 large garlic cloves
3/4 cup lentils
2 cups vegetable broth
1 can tomato paste
1 tsp. cumin
1/3 cup mayonnaise
2 tbls. lime juice
3 tbls. chipotle hot sauce
salt and pepper
fresh, chopped cilantro
Preheat the oven to 425 degrees. Place the cauliflower on a baking sheet with 2 tbls. olive oil, salt, and pepper and bake for 30 minutes, until the cauliflower is golden on the edges.
While the cauliflower is baking, cook the lentils. Put 1 tbls. olive oil in a pot and saute the onions and garlic for 5 minutes. Add the tomato paste and cumin and saute for another minute. Stir constantly to keep the vegetables cooking evenly. Add the lentils and vegetable broth and bring the mixture to a simmer. Cook uncovered for 30 to 40 minutes until the lentils are soft. If needed, add more broth until the lentils are completely cooked.
Mix the mayonnaise, lime juice, and chipotle sauce with a dash of salt and pepper to make the dressing.
Warm the tortillas in a pan over low heat. Top each tortilla with the lentil mixture, cauliflower, creamy sauce, and chopped cilantro. Squeeze fresh lime on top if you’d like to add a little extra flavor and enjoy!
