Recipe of the month: Peach Chicken with Rice
Delight your valentine with this sweet and savory dish featuring chicken and peaches!
INGREDIENTS
1/4 cup orange juice
2 tbs coconut sugar
2 tbs low sodium soy sauce
2 tbs rice vinegar
2 tbs olive oil
4 skinless, boneless chicken breasts
1/2 tsp sea salt
1/4 tsp pepper
1 tsp grated fresh ginger
2 cloves garlic, minced
1/2 cup low sodium chicken broth
20 oz frozen peaches, minced
DIRECTIONS
- In a small bowl, whisk together the orange juice, sugar, soy sauce, and rice vinegar until the sugar is dissolved.
- Heat the oil in a large skillet over medium high heat. Season the chicken on both sides with salt and pepper. Add the chicken to the skillet and cook until browned, about 2 minutes per side. Transfer the chicken to a plate.
- Heat the remaining oil in the same skillet. Add the ginger and garlic and cook, stirring, for 30 seconds. Add the chicken broth, sauce mixture, and minced peaches. Turn the heat up to high and cook, uncovered. Stir occasionally until the sauce thickens and the peaches soften, about six minutes. Add the chicken back to the pan and reduce the heat to medium-low. Cover and cook for five minutes, until chicken is cooked all the way through.
- Serve the chicken over brown rice topped with the sauce.
Tip: To add beauty and extra taste to your dish, sprinkle the chicken with toasted almonds and a maraschino cherry. Include steamed broccoli to create a full, healthy meal.
